Here is a photo of my dinner – bean salad made this morning accompanied with two meat balls and two mangoes. This will all be washed down with soya milk.
und hier noch das Rezept:
„here, let me share you the recipe of my bean salad. actually, this is my reinterpretation of that in inimitable Cretan bean salad.
one kg of black eyed beans
salt to taste
spoonfull of black pepper
4 bay leaves
8 big tomatoes, finely chopped
1 cup of finely chopped parsley
half cup of extra virgin coconut/olive oil
soak the black eyed beans over night. boil it the following day. make sure that beans is fully covered with water. add bay leaves and black pepper before boiling. boiling time is about two hours.
when soft, add salt to taste, and boil it for another 5 minutes – then drain.
on a big mixing bowl, mix the beans, parsley and tomatoes and pour olive or coconut oil. mix and serve.
this salad is excellent when cold. i normally make a salad for the whole week. i put them on tupperwares and refrigerate. i grab one of them on my way to work. it is also a perfect gift to your friends at work. they’ll love it“
